The Wine:
This is the heart of the Parker Estate story. It encapsulates the iconic combination of Cabernet and terra rossa soil in a wine that has poise, integrity and reliable year after year. Not to mention it's phenomenal value.
The small batch parcels of grapes were fermented in closed top fermenters for 13 days with approximately 10% of the parcels undergoing extended (30 day) maceration time to develop flavour and cellaring potential. All parcels completed malolactic fermentation in stainless steel, then were barrelled down to a combination of new (50%), second, third, and fourth fill French oak for 12 months.
Cassis, dried herbs and spice dominate the palate with structured tannins and a beautifully balanced finish. The wine shows intense and fleshy fruit with a structure that will last.
